For Santos, use water just off the boil (93°C) and a medium grind. It’s forgiving, so don’t stress too much about precision.

For Yellow Bourbon, drop the temperature slightly (91°C) and grind a touch finer. This brings out the sweetness without extracting any bitterness. Take your time, Yellow Bourbon rewards patience.

The French Press Method

Both coffees love the French press. Use a coarse grind (like breadcrumbs), water at 94°C, and steep for 4 minutes. Santos becomes even more chocolatey and comforting. Yellow Bourbon transforms into pure silk, rich, smooth, impossibly sweet.

The Espresso Route

For Santos: 18g in, 36g out, in about 26 seconds. Classic parameters for classic results.

For Yellow Bourbon: 18g in, 38g out, in 28-29 seconds. That extra couple of grams and few seconds pull out more sweetness.
